OLIGOSACÁRIDOS: Son aquellos que contienen de 3 a 9 unidades monosacaridas en su estructura. No están ampliamente distribuidos en los alimentos y productos alimenticios.
POLISACÁRIDOS: Constituidos por numerosas unidades de monosacáridos unidos entre sí por enlaces glucosídicos. Algunos son polímeros de un solo tipo de monosacáridos y reciben el nombre de homopolisacaridos, mientras que otros dan por hidrolización más de una clase de monosacáridos, llamándose Heteropolisacaridos.
